#3 Follow the Menus

  

Menus will be provided for each month.

 

Each month will have menus provided. I ask and expect you to follow the menus as closely as you reasonably can. There will be links, all kinds of links, to take you to YouTube videos which give low-carb meals and recipes for all kinds of foods. There are two good reasons to follow these menus. First, if you just assume you can create your own low-carb meals, you may be eating many more carbs than you think you are. And you probably will not get the results you want.

 

Remember, for these four months you are in "boot camp." This is not a time to dabble on the edges of low to high carb. This is a time to stay thoroughly, completely, and radically low carb. After you get your glucose close to normal, then you may want to experiment with iffy foods, but this is not that time. You need to settle it in your mind that for the months of this challenge you are going to be highly disciplined in your eating. Get that A1c down, get those daily glucose levels down, and stop worrying about what you are giving up. The numbers Mike the Meter will share with you will more than make up for missing out on that baked potato or bowl of breakfast cereal.

 

Some will have to improvise, of course. If you are vegetarian, you will have to find a substitute for the meat parts of the meals. Eggs would be an excellent substitute. If you cannot have a "carnivore day," have an "eggs and cheese" day. Chaffles are incredibly versatile – every diabetic needs to make friends with Mr. Chaffle! Some of you may live in remote villages where you cannot find products like almond flour, psyllium husk, or protein powder. So if you cannot follow the meal plans exactly, do the best you can. Every country is going to have eggs, every country is going to have low-carb vegetables, and every country is going to have nuts and seeds available. Be creative, do your research, and make us of what is available in your area.

 

Below are menus that I created for our earlier challenge. I have changed the months and days, but these menus worked in the first half of the year for our participants, and they will work for you.
